You can try asking some Electronic parts suppliers Online if they have a knob that is as close as possible to the type of the AU-717. If you can send them a photo of the knob, or the whole 717, then they should be able to tell you if they have something like it or not.
Otherwise, I'd say if you really like the AU-717 alot and plan to keep it for a long time, its a good idea to buy a 2nd AU-717 which you can use as a parts resource unit. The AU-717 was a very popular model, Sansui sold many of them, so finding a non-working, inexpensive one shouldnt be all that difficult. If you are in Europe, check the Ebay listings on Ebay Germany.
You can also consider buying an AU-717 that is in excellent condition and using that as your main amplifier, and keep the one you have now with the missing knobs as you extra, spare unit.
Keep in mind, if you are looking for an inexpensive one so that you can obtain the knobs, you dont have to look at just the AU-717, because other models like the AU-517, 417.... use the same type knob, so if someone is selling a non-working AU-517 for example, you can use that. Or even other models like the AU-919, though those are a bit harder to find and more expensive than a 717. I think even the later models like AU-D11 and AU-G77X's knobs would work as well, they have the same black knob and red stripe on them.
